Tortilla Soup

September is here! I’m not a crazy pumpkin spice person (gasp!) but I do love the crunchy leaves, sweatshirt weather and making warm cozy meals for my family.  I decided to do another freezer meal stash before school started (I promise that post is coming at some point! Edit: It’s been three years now and I still owe you all that freezer post…whoops but I have made a few dinner idea posts! See here and here) and wanted to include a soup.  I asked the kiddos what they wanted and tortilla soup was the clear winner.

Then it turned into a 95 degree day with 100% humidity. Mmmmmm nice warm soup sounded…awful!  I made it anyway and then we had ice cream before dinner to cool our souls back down and have one last hurrah before school started.  This is a super easy dump recipe and I make it in the crock pot to make it even easier.  One pot clean up for the win! Follow below to make everyone in your house happy when it eventually does turn into soup weather.

First things first- since I was doing a freezer cook and needed chicken for more than one recipe, I threw a bunch of it on a sheet pan and got it going in the oven. I love buying the big bags of frozen chicken breasts or tenders when they go on sale.  Its great to stock up and then always have something to pop into the oven for dinner. I sound like so much more of a homemaker than I actually am…shhhhhh…don’t tell.

After this I started dumping everything into the crock pot!

*Two cans each of:

-cheddar cheese soup

-cream of chicken soup

-cream of celery soup

Appetizing I know. Side note-the spatula/scraper below is awesome.  I have it in two different sizes and they are perfect for recipes like this that require scraping things out of a can.

Next, dump in the diced tomatoes, chicken broth and salsa

Dice one onion (hardest part of this whole thing) and add that too.

The last few steps are to add some pressed garlic, chili powder, salt & pepper.  Once the chicken is fully cooked you can shred or dice it. I always feel like cutting it up is faster than shredding it. Add it to the pot as well.  Let everything heat through, go watch TV, get your toes done, take a nap…just kidding! Go ahead fold the laundry, do the dishes, yell at the kids, you know, the usual.

At this point if you are going to serve it right away you are good to go.  We always add sour cream, shredded cheese and Fritos on top. Pretty sure this is the only reason my kids eat it.  If you are going to freeze it, let it cool before storing in freezer bags.  We usually get two gallon sized freezer bags out of this recipe.

A white bowl sits on a wooden table.  The bowl is filled with a golden soup with red bits of tomato in it.  It is topped with a few sprigs of cilantro, a small amount of sour cream, shredded cheese and some Fritos are sprinkled on top as well.

There are a ton of other options to add to this recipe.  I’m picky, E is picky and the boys don’t know what they’re missing when I cut it out. Get creative and add your own spin! Let me know if you find a winning combo, I’d love to eventually branch out and try something new.
